Chili

Ingredients

  • 2 lbs ground beef

  • Salt and pepper to taste

  • 2 cans (28 oz) chopped tomatoes

  • 1 can (15.5 oz) kidney beans, rinsed

  • 1 can (15 oz) Mrs. Grimes chili beans

  • 4 oz tomato paste

  • 1 onion, chopped

  • 2 - 3 whole chili peppers (optional)

  • 3 tbsp chili powder

Finishing Ingredients

  • shredded cheddar cheese

  • sour cream

  • Doritos or crackers

  • Additional chili powder or Volcano Dust to taste

Step By Step

  1. In a large stock pot over medium high heat, begin browning ground beef. Use a spoon to break it apart into smaller bits. Season with salt and pepper as desired.

  2. Add the chopped onion, and cook until softened. Mix in the tomato paste, chili powder and optional chilis.

  3. Add in the canned beans and tomatoes and heat till bubbling.

  4. Reduce heat, simmer for 3 hours uncovered.
