Papa’s Crepe

Ingredients
1 cup flour
2 tbsp sugar
1.5 cups milk
1 tbsp vegetable oil
2 eggs

Fresh fruits, whole or sliced

Step By Step
Mix flour and sugar in a small mixing bowl.
Add 1.5 cups milk to a measuring cup. To the milk add the tbsp of oil.
Pour the milk/oil into the bowl of flour/sugar, and immediately begin mixing with the hand mixer till it forms a batter, thin and smooth. Keep the measuring cup handy for the next step.
Crack eggs into the measuring cup and beat with the hand mixer still combined.
Add the eggs to the batter, and continue mixing till completely incorporated.
Heat the crepe pan over medium high heat. Wait for it to become hot before making your first crepe.
Pour a small amount of batter into the hot crepe pan and swirl to quickly coat the entire bottom of the pan. Pour the excess back into the bowl of batter.
Return the pan to the stove top and wait for the crepe to begin bubbling. Peel the crepe up with the edge of a knife and use your fingers to pull the crepe up. It should be golden. If it’s brown, remove the next one sooner or reduce heat.
Place the finished crepe on a serving plate.
Repeat until until all batter is used, stacking your crepes on the serving plate.
